Rice with BOLETUS (porcini) y fresh foie

For four people:

500 grams of rice

250 grams of rabbit

150 grams of fresh foie

Laminated garlic

50 grams of DEHYDRATED BOLETUS (PORCINI)

Salt and oil
 
Hydrate BOLETUS (porcini) in boiling water for five minutes, drain and discard the water.  Put finely diced garlic in a heated paella with oil (the pan used to make paella).  Remove the garlic from the pan.  Slice the fresh foie and brown in oil and remove. Brown the duck well and remove. Add the mushroom and simmer for 10 minutes. Add the rice and the duck and cook for 15 minutes. Five minutes before the rice is finished add the foie.
