Cream, egg, salt and chive curls
Simmer MUSHROOMS with cream until tender, mix with a hand blender and allow to cool. Separately whisk the white of an egg with a bit of salt and put it together with the cream in a pastry bag. For the chive curls, make thin slices and put them in water with ice.
